DOSE: 1/2 cup water 1/4 cup sugar 2 tsp.
cinnamon 2 tsp., 1/8 tsp.
cloves 1/16 tsp.
ginger 1/3 cup sugar 1 tsp.
salt 2 Tbsp.
vinegar 1 Tbsp., 1 Tsp.
lemon juice TEMPLATE: 1 1/5 cups water, 1/10 cup sugar, 1 Tbl.
lemon extract 1 TBL.
vinegar, 1 tsp., salt, lemon peel TEMPLE: 1 cup water, 3 Tbsp sugar, 3 tsp.
lemon essence, 1 cup orange juice, 1 1-2 tsp.
vinegar Instructions In a large bowl combine all ingredients.
Pour in 2 cups of the water and mix well.
Add the cinnamon and cloves and mix again.
Add salt, vinegar and lemon juice and mix.
Add lemon juice, vinegar, lemon essence and mix until thoroughly mixed.
Pour into a large glass jar and store in the fridge for up to 4 days.
To make monk juice: Add water to a pot of boiling water and add the dried fruit, juice, and spices.
Bring to a boil and cook for about 5 minutes.
Remove the lid and let cool completely.
Add 1 TBS.
lemon and 1 Tbs.
vinegar to taste.
Pour off any excess liquid.
Stir in the orange juice and vinegar.
Serve hot or cold.
To freeze monk juice for use in a future recipe, thaw in the freezer and use on a banana peel or banana.
